A CULINARY PARADISE
Potatoes, maize and peppers: the most famous ingredients of the Peruvian kitchen have conquered the whole world, but the use is nowhere so variated as in Peru itself. Count up the delicious fish dishes of the desert-coast, the pisco-sour (the national cocktail made of a grape liqueur), the traditional chicha (corn beer) and coca, and Peru's love for sweets (cakes!), and you know that you are in a culinary paradise!

In almost every Peruvian dish potatoes, maize and peppers are used. The most striking example might be the so typical Peruvian soups: tasty bouillons in which you'll find anything floating around. You'll spoon meat, vegetables, rice and surely cooked potatoes and half a corncob. Those who like (really) spicy get a small plate of cut peppers, sprinkled with olive oil, lemon juice and saltserved with it...

The dishes with potatoes in it are endless – as are the different kinds of potatoes by the way. Try for example causa (a cold pastry of mashed potato, avocado, chicken or tuna), papa rellena (stuffed potato with meat, onions, olives, boiled eggs and – of course – peppers), papa ocopa (boiled potatoes in a mild-spicy peanut sauce), papa a la huancayo (boiled potatoes in a cheese sauce with peppers), or lomo saltado (baked potatoes, strips of steak and tomatoes).
Other typical dishes that you must taste during your stay are ceviche (raw fish, marinated with lemon juice), rocoto relleno (stuffed peppers, with meat, potatoes and eggs), anticucho (skewers of roasted beef, heart or kidneys, with a potato on top…), and of course cuy (guinea pig).

Then it's up to the market, to discover and buy the versatility of ingredients we need for the three dishes we are about to prepare…
